Mexican Cooking Class

Ingredient List

  • 1 pound ground beef (87-90% lean) (can substitute ground turkey, chicken, or pork)

  • 1 small onion, finely chopped 

  • 1 medium carrot, diced (small) 

  • 1 jalapeño pepper, seeded and minced 

  • 4 cloves garlic, minced 

  • 1 teaspoon ground cumin 

  • 1 tsp chili powder 

  • 1 can diced green chiles 

  • 2 roma tomatoes, chopped 

  • 10 green olives, coarsely chopped 

  • 1 tablespoon liquid from olive jar 

  • 1/4 cup raisins 

  • 1/4 cup water or beef stock 

  • Chopped cilantro for garnish 

  • Fresh limes for squeezing 

  • Salt and pepper to taste 

  • Vegetable oil
