Mexican Cooking Class

Ingredient List

1 pound ground beef (87-90% lean) (can substitute ground turkey, chicken, or pork)

1 small onion, finely chopped

1 medium carrot, diced (small)

1 jalapeño pepper, seeded and minced

4 cloves garlic, minced

1 teaspoon ground cumin

1 tsp chili powder
-
1 can diced green chiles

2 roma tomatoes, chopped

10 green olives, coarsely chopped

1 tablespoon liquid from olive jar

1/4 cup raisins

1/4 cup water or beef stock

Chopped cilantro for garnish

Fresh limes for squeezing

Salt and pepper to taste
